Saute of Beef with Vegetable Coulis

  • 3 lbs (l.350kg) beef shoulder cut in cubes of 1 inch (3 cm)
  • 3 medium size carrots
  • 2 medium size white onions
  • 3 tablespoons (45mL) of cooking oil
  • 2 bay leaves and 3 twined thyme strands
  • 2 peeled garlic cloves
  • 1 cup (250mL) of red wine
  • 6 to 8 cups (1 ½ to 2 liters) of Home Goodness Organic Beef Less Sodium Broth

 

1) Peel the carrots and the onions and cut in cubes

 

2) Heat on high heat 3 Tbsp (45mL) of cooking oil, add the meat, let brown, stirring for about 5 minutes.  Add salt and pepper scarcely

 

3) Remove the meat.  Add the carrots and the onions, brown slightly

 

4) Replace meat, the bay leaves, the thyme, the garlic and the red wine

 

5) Add the Home Goodness Organic beef less sodium broth and bring to a boil

 

6) Put in the oven for 2½ hrs at 375°F (190°C)

 

7) After 2½ hrs, remove the meat, the bay leaves and the thyme

 

8) Degrease the cooking liquid then mix in a blender with the vegetables

 

9) Sieve the mixture and add the meat

 

10) If needed, add more beef broth to fully cover the meat and simmer for 30 minutes
